Tasting Notes: Colour is medium Yellow/Straw. Ripe peach and nut aromas with toasted almond meal & a hint of struck match. Light evolution of flavours on the palate evolving to complex tones of lime conserve, baked lemon tart and Brioche ending with a fine, tight, fresh acid finish. Lingering flavours of marzipan on the aftertaste.
Winemaking Notes: Harvest: Hand-picked March 5th Vinification: Crushed and pressed with full solids straight to French oak (30% new), both primary fermentation and malotaltic were natural Elevage: 10 months on lees in oak before being racked in preparation for bottline I racked off lees just prior to bottling
Viticultural Notes: Swallowfield is located in Gembrook, making it the southernmost vineyard in the Yarra Valley. While Gembrook is known for its volcanic derived red soils, Swallowfield sits on a granite outcrop. These quartz rich soils are perfect for growing Chardonnay and Pinot Noir. This Chardonnay is made from 96, 76 and I clones and ‘Dans les Bois’ translates to ‘In the Woods,’ as this incredible vineyard block is sheltered on all sides by natural forest. The 2018 harvest will be remembered fondly by winemakers in the Yarra Valley. It was a rare season that gave above average yields and excellent quality fruit. Dry sunny conditions with cool overnight temperatures provided good natural acidity and concentrated wines at lower alcohol levels.
