With aromas of dark cherry, cacao and a hint of roasted chestnut; this is a great example of how good merlot can be. The palate shows blackcurrant, dark chocolate and some black olive complexity.
Fruit was destemmed as whole berries and fermented on skins for 14 days. Pressed to seasoned French oak puncheons for malolactic conversion, spending 11 months in oak priorto bottling.
The grapes for this wine were picked with viticultural practices based around maintaining balance in the vineyards, sustainability and responsiveness to changing environmental conditions.
