Aromas of croissant pastry, oatmeal, salted almond and citrus blossom. The palate is vibrant with green apple energy, barrel ferment and creamy lees notes. There’s a saline edge and a crisp and refreshing line of acidity. This sparkling should develop nicely over the medium term.
Vinification & Elevage: Base wines are fermented in both stainless steel and aged 700L oak casks. Post maturation, these base wines undergo the Charmat method, resulting in a fresh and versatile style of sparkling wine.
This sparkling wine is produced from fruit grown on grey clay soils in both Yarra Junction (Upper Yarra Valley) and Gruyere.
