‘Dans les Bois’ translates from French into ‘In the Woods’
Tasting Notes: This upper Yarra Chardonnay has scents of white peach, apple pie pastry, cinnamon spice and orange blossom florals with some lit candles underlying. The palate is loaded with stone fruit, lemon curd, croissant, juicy pear and some savoury lees influence. The texture is both soft and refreshing with a small squeeze of limey acidity to close.
Winemaking Notes: Hand-picked on the 25th March
Vinification & Elevage: Fruit was whole bunch pressed directly to French oak barriques (20% new) for primary fermentation. 50% of the blend underwent malolactic conversion with no lees stiring. 9 months on lees in oak.
Viticultural Notes: Chardonnay clone: 95
The grapes for this wine are from a vineyard in Gembrook and is the southernmost vineyard in the Yarra Valley. Whilst known for its volcanic derived red soils, this vineyard sits on a Granite outcrop. These quartz rich soils are perfect for growing high quality Chardonnay.
2021 was a welcome return to ideal growing conditions here in the Yarra Valley. A prolonged, classical season allowed for brilliant definition of flavour across our range.
