‘Dans les Bois’ translates from French into ‘In the Woods’ and represents this incredible vineyard which is surrounded by natural forest.
A lifted nose of red forest berries, spiced damson plum, dried alpine florals and mountain herbs. There’s an undercurrent of ferrous iron like notes true to the hallmarks of Upper Yarra Pinot.
The palate features red cherry, red currants, twiggy herbs and dried oregano. It’s very lively with cleansing acidity and savoury spices, with gentle tannins drawing out the finish.
Vinification & Elevage: The fruit was partially destemmed and fermented as whole berries, with 10% remaining as whole bunches. After 18 days on skins, it was pressed into oak (15% new) for malolactic fermentation on lees. It aged in oak for 10 months before racking and bottling, with a total production of 375 dozen.
