‘Dans les Bois’ translates from French into ‘In the Woods’ and represents this incredible vineyard which is surrounded by natural forest.
This Chardonnay features aromas of hazelnuts, cinnamon and spiced apples. There’s citrus blossom and vanilla wafer. The palate has nectarine, red apple and a juicy mid palate. The wine draws long with saline acid and a gentle glossy feel.
The fruit for this Chardonnay comes from a single vineyard in Yarra Junction.
2023 was a vintage where a wet spring provided challenges, yet through hard work and perseverance we enjoyed a mild and kind harvest period that has produced wines of vibrancy and finesse.

Delicate white peach and nectarine lead the aromas, with flickers of nougat, Meyer lemon, and almond cream providing gentle support, and a whisper of honey emerging after some air. The bouquet is quite demure, requiring a coaxing swirl to fully reveal its complexity. The palate shows a nicely creamy texture, carrying the defined fruit notes from the nose through to the taste, before a good lick of chalky phenolics frames a finish of satisfying length. There is a pleasing, grippy texture that threads through the finish, adding structure and persistence, leaving a subtle impression of refinement and tension.

Fruit was whole bunch pressed to French oak barriques (15% new) for both primary and partial malolactic fermentation (15%) on lees. In oak for 9 months prior to racking and blending for bottling. 150 dozen produced.
