This Cabernet showcases all the hallmarks of a classic cool Yarra vintage. Notes of blackberry pastilles, soft licorice, black olive, blackboard and dark plum fruits.On the palate there’s cacao, dark cherry, blackberry and cherry cola with fine tannins and fresh acid lines from the cool vintage.
Vinification & Elevage: Fruit was destemmed as whole berries and fermented on skins for 14 days. Pressed to seasoned French oak for malolactic conversion, spending 11 months in oak prior to bottling.
