This wine is inspired by the traditional blend of Bordeaux’s ‘Right Bank’ where the predominate variety is Merlot, we celebrate our interpretation of this blend here in the Yarra Valley.
Tasting Notes:
A balanced blend of Merlot and Cabernet Franc, with the Merlot taking the spotlight on the nose. Aromas of mocha, dark chocolate, black olive, and briar with an underlying earthy bass note. On the palate, the flavours are quite savory, featuring olive tapenade, nori roll, and brisket. With air the fruits are revealed, allowing the Cabernet Franc to shine with notes of damson plum and a hint of cherry, accented by dried rosemary. The wine's earthy tannins integrate beautifully with these evolving flavours.
Winemaking Notes:
Vinification & Elevage: Fruit was de-stemmed as whole berries. A short cold soak prior to fermentation and on skins for 14 days. The wine was pressed to seasoned French oak of barriques and a foudre for malolactic conversion on lees and in oak for 10 months.
Viticultural Notes:
2021 was a welcome return to ideal growing conditions here in the Yarra valley. A prolonged, classical season allowed for brilliant definition of flavour across our range.
