‘Dans les Bois’ translates from French into ‘In the Woods’ represents this incredible Upper Yarra vineyard which is surrounded on all sides by natural forest.
Tasting Notes: Quite a fragrant expression of Upper Yarra Pinot, yet a fine and delicate wine reflecting the very cool growing season. Warm spice notes of cinnamon, clove and rosemary meet plum and red cherry fruits. The palate is delicate yet charming with plum, rhubarb, some forestry notes with a gentle tannin that allows the fruit flavours to linger.
Winemaking Notes: Hand-picked on the 25th of March
Vinification: & Elevage Fruit was sorted and fermented as 100% whole berries. 4 day cold soak and on skins for 12 days. Pressed to barrel (20% new) for natural malolactic conversion, sulphured on lees for 9 months. 250 dozen produced.
Viticultural Notes: Pinot Noir clones: D5V12, 115 and MV6
The grapes for this wine are from a vineyard in Gembrook and is the southernmost vineyard in the Yarra Valley. Whilst known for its volcanic derived red soils, this vineyard sits on a Granite outcrop. These quartz rich soils are perfect for growing Pinot Noir.
2020 was a long and cool growing season in the Yarra Valley. Winter rains were substantial and by the end of spring we had full and healthy vine canopies. The conditions around flowering were challenging leading to low fruit yields. The season progressed with very mild conditions extending the ripening period for harvest well into Autumn for some varieties. The 2020 wines reflect our part of the world and our cool climate.
