Tasting Notes: Light straw. It has a delicate nose. Subtle pink grapefruit and apple aromatics. Quite an energetic palate that will unfurl with time, gaining more substance and weight.
2015 will be remembered as one of the finest harvests ever seen in the Yarra Valley.
Winemaking Notes: Hand picked on 18th March 2015
Crushed and pressed with full solids straight to French oak (30% new), both primary fermentation and malo-lactic were natural.
Elevage: 10 months on lees in oak before being racked and blended in preparation for bottling.
Viticultural Notes: Swallowfield is located in Gembrook, making it the southernmost vineyard in the Yarra Valley. While Gembrook is known for its volcanic derived red soils, Swallowfield sits on a granite outcrop. These quartz rick soils are perfect for growing Pinot Noir and Chardonnay.
