Tasting Notes: Ethereal and deeply perfumed, with a spicy fragrance of red and black cherries backed by restrained notes of creamy and faintly toasty oak. Winemaking Notes: Hand-picked 19th March.Sorted, partly de-stemmed (50% whole bunch), short cold soak, natural primary and malolactic fermentation, pressed to French oak (30% new).10 months in oak, racked off lees just prior to bottling. Unfined and unfiltered.
Viticultural Notes: Swallowfield is located in Gembrook, making it the southernmost vineyard in the Yarra Valley. While Gembrook is known for its volcanic derived red soils, Swallowfield sits on a granite outcrop. These quartz rich soils are perfect for growing Pinot Noir and Chardonnay. ‘Dans les Bois’ which translates into ‘In the Woods’ represents this incredible vineyard which is surrounded on all sides by natural forest. After several warm growing seasons, 2017 was a return to a classic Yarra Valley harvest producing balanced, elegant wines with wonderful natural acidity.
