Tasting Notes: Supremely elegant, textural and multidimensional, this artfully balanced chardonnay has a penetrative bouquet of grapefruit, melon and lemon backed by notes of matchstick oak, coriander and white flowers. It’s long and mineral, with translucently clear fruit and smoky, charcuterie-like complexity extending with drive and focus towards a refreshingly brisk finish of taut acidity.96 POINTS · JEREMY OLIVER.
Winemaking Notes: Hand-picked 23rd March.Crushed and pressed with full solids straight to French oak (20% new), both primary fermentation and malolactic were natural.10 months on lees in French oak before being racked and blended in preparation for bottling.
Viticultural Notes: Swallowfield is located in Gembrook, making it the southernmost vineyard in the Yarra Valley. While Gembrook is known for its volcanic derived red soils, Swallowfield sits on a granite outcrop. These quartz rick soils are perfect for growing Pinot Noir and Chardonnay. Named ‘Dans les Bois’ which translates into ‘In the Woods’ represents this incredible vineyard which is surrounded on all sides by natural forest. After several warm growing seasons, 2017 was a return to a classic Yarra Valley harvest producing balanced, elegant wines with wonderful natural acidity.
