Tasting Notes: Medium/deep purple colour. Dark fruit aromas of black current, blood plum and cassis with a hint of warm sweet earth and charry cold campfire undertone. A soft but full evolution on the palate with a rich, layered complex of dark forest berry fruit, blood plums and wild brambles. Fine but firm acid carries the fruit into a strong but finely wrought cedary tannin structure.
Winemaking Notes: Hand-picked 13th and 15th March 2019
Fruit is fermented as a combination of whole berry and crushed. Short cold soak then plunged once a day and pressed after 14 days on skins to French oak (15% new) for indigenous malolactic conversion and maturation. 10 months in oak, then racked twice prior to bottling.
Viticultural Notes: Optimal conditions for both flowering and fruitset in the vineyards gave well balanced fields with plenty of promise leading into the 2019 harvest. A dry January and February followed, culminating in a relatively compressed vintage, though attention to detail in the vineyards gave winemakers wonderfully balanced fruit with concentration of flavour and exceptional natural acidity.
