"Bright straw-yellow in the glass. Honey, sourdough toast and peach aromatics. A fine bead fills the palate whilst stone-fruits, honeyed toast and a savoury yeast-extract undertone offer character. Great length, with ample acidity which sits in the background and gently drives it to a drying finish that has the class of well-aged sparkling."

Tasting Notes:
Vibrant Upper Yarra Sparkling, layered and composed, built on crisp acids and chalky textures. Notes of apple blossom, pastry dough, peach and lemon curd unfold in the glass to introduce a refreshing and versatile wine.
Winemaking Notes:
Vinification & Elevage: Hand picked, whole bunch pressed using Méthode Traditionnelle approach. Aged on yeast lees for 5 years.

Viticultural Notes:
The grapes for this wine come from a single vineyard in Gembrook in the Upper Yarra Valley. Whilst known for its volcanic derived red soils, this vineyard sits on a granite outcrop. These quartz red soils are perfect for growing Chardonnay and Pinot Noir.
After several warm growing seasons, 2017 was a return to a classic Yarra Valley harvest producing balanced, elegant wines with wonderful natural acidity.
